A holiday that creates excitement in humans can create intense anxiety for companion animals and livestock. Dr. Dustin Weaver, Georgia's deputy state veterinarian, said there are multiple ways to prepare and ease your animals' anxiety. During this season, animal owners need to be aware of where firework shows are traditionally held and of newly announced shows. According to Weaver, if your animals are located within five miles of a fireworks show, they could be affected by the sounds. Knowing your animals is key to preparing them for the 4th of July. Weaver said an animal that is already jumpy, fearful and reactive will respond negatively when exposed to unfamiliar sounds. Companion animals, such as dogs, can re- act in several ways including soiling the house, gnawing on furniture, or escaping from the house. Weaver said prior coun- terconditioning can curb these reactions. Counterconditioning works by using exposure to create anxiety, then introduc- ing a counterconditioning tool. To accomplish this, play the sound of fireworks on your phone or television. Once your dog begins to show signs of anxiety, give them a bone or a durable toy. Introducing a bone or toy diverts their anxiety to a healthier behavior. Black, Commissioner Reminder: Vet loan loan repayment applications are due Aug. 1 Program incentivizes vet care in rural areas ATLANTA The Georgia Veterinary Education Loan Repayment Program is now accepting applications for Fiscal Year 2022-2023. The 2022 Georgia General Assembly appropriated state funds totaling $90,000 to pay toward the student loan debt of veterinarians who commit to 12 months of food animal veterinary medicine in rural areas of need in the state. The State Veterinary Education Board will contract with up to five eligible applicants in 2022 for award amounts of up to $18,000. Participants may reapply at the successful end of their contract, with a total of $80,000 in assistance possible from the program. Each applicant is required to submit a completed application form and the appropriate reference documents to the veterinary education board by no later than Aug. 1, 2022. Completed applications must be accompanied by three completed reference forms, one of which must be from a DVM/VMD and one from a current of former employer. If an applicant has no employment history, they are asked to include a reference from a professor directly involved in the completion of their veterinary degree program. Program highlights: GVELRP incentivizes Georgia veterinari- ans who agree to devote 20 per hours per week, in designated rural counties with populations of 35,000 or less, for one year to food animal veterinary services. The 2022 Georgia General Assembly approved $90,000 for program funding, allowing up to $18,000 award payments for up to five award recipients. The Georgia Student Finance Commission will apply payment against pre-determined student loans as indicated by the applicant. Applications will be accepted until Aug. 1. Georgia Green Tomato Pie Submitted by Shirley Ann Berry | Dalton Published Oct. 18, 1995 Ingredients 2 (9-inch) refrigerated pie crusts 5-6 medium green tomatoes, sliced cup sugar cup vinegar 1 tsp allspice 1 tsp cinnamon 1 tsp ginger cup (1 stick) margarine or butter Directions Preheat oven to 375 degrees Fahrenheit. Line 9-inch pie plate with pie crust. Fill crust with sliced tomatoes. In small bowl, mix sugar, vinegar, and next 4 ingredients. Pour mixture over tomatoes. Cover with remaining pie crust. Bake for 45-50 minutes or until golden brown. Testers' Notes We used a homemade all-butter pie crust the higher proportion of fat in the dough kept the pie from getting too soggy in the oven. Cheesy Pepper Jelly Wafers Ingredients 1 lb sharp cheddar, grated 4 oz butter, softened tsp salt 2 cups all purpose flour cup pepper jelly (or jellies) of your choice For rosemary-cracked black pepper 1 Tbsp fresh chopped rosemary 1 tsp fresh cracked black pepper For cayenne-paprika 1/8 tsp cayenne pepper (or more if desired) tsp smoked paprika Directions Cream butter and cheese until smooth. Add remaining ingredients and desired flavorings and mix until combined. Form into 2 logs about 2 inches in diameter. Chill or freeze until firm. Slice into inch slices and create a defined thumbprint in the center of each. Bake on parchment-lined baking sheets at 350 degrees for 8 minutes. Redefine the thumbprints in the middle of each cookie (some may have puffed during baking), then bake for another 3-5 minutes. Let cool completely. Fill each thumbprint wafer with teaspoon of pepper jelly and serve. Makes about 4 dozen savory cookies Peach Tartlets Submitted by the Georgia Agricultural Commodity Commission Ingredients 3 lbs (about 12 medium) fresh peaches 1 Tbsp fresh lemon juice 1 cup sugar 4 tsps cornstarch 6 (5-inch) baked tart shells Whipped cream Directions Peel and slice peaches into eights. Combine peaches, lemon juice and sugar. Let stand 20 minutes. Drain juice into a measuring cup. There should be 1 cup of liquid. If not, finish filling cup with water. Blend in cornstarch and cook until transparent. Cool. Divide fruit equally among tart shells. Spoon cold sauce over each tart to form a glaze. Chill until the glaze is set. Garnish with whipped cream. Summer Vegetable Medley Ingredients 3 slices thick cut bacon, diced 2 ears corn, kernels cut off cob 1 Vidalia onion, peeled and diced 2 cups diced bell peppers, any color combination 1 zucchini, cut in quarters lengthwise then sliced about inch 1 container grape tomatoes Salt & pepper Optional: fresh basil, thyme, oregano, or cilantro Directions Heat a large cast-iron skillet over medium heat. Add diced bacon to hot skillet and cook until crispy. Add Vidalia onions and peppers to skillet and cook about 2 minutes, stirring to cook evenly. Add zucchini and corn to mixture, season with salt and pepper. Cook mixture an additional 2 minutes. Add tomatoes to skillet and cook until they just start to blister. Adjust seasoning and add fresh herbs if desired. Remove from heat and serve. Serves about 12. Corn Relish Submitted by Mrs. J.D. Shockley | Baldwin, GA Published Sept. 15, 1976 Ingredients 12 ears sweet yellow corn 4 cups chopped cabbage 6 medium onions 3 sweet green peppers 3 sweet red peppers 2 tsps dry mustard 1 Tbsps celery seed 2 tsps ground turmeric 3 cups sugar cup flour 2 tsps salt 1 quart white vinegar Directions Cook corn in boiling water for 5 minutes. Cut off cob. Chop other vegetables fine. Mix herbs, sugar, flour, salt, and vinegar together. Add chopped corn and vegetables, then bring to boil. Reduce heat and simmer slowly for 35 minutes (stir often). Pour into sterilized jars. Process in hot-water bath for 20 minutes. Peach, Cucumber, Roasted Sweet Corn, and Vidalia Onion Salad with Chili-Lime Vinaigrette Ingredients 2-3 peaches, skin on, diced into inch pieces 1 large cucumber, diced into inch pieces 1 small Vidalia onion, diced into inch pieces 1 jalapeo, diced into inch pieces (if you would like it spicier, include some diced ribs and seeds) 1 ear of sweet corn, shucked 1/3 bunch cilantro, leaves picked from stems 4 cups chopped Romaine lettuce 2 Tbsps lime juice cup peanut, pumpkin seed, or fruity olive oil, plus teaspoon more to roast the corn 1 clove garlic, minced 1 pinch (to taste) smoked paprika 1 pinch (to taste) fragrant chili powder Directions Set broiler to high. Rub corn all over with teaspoon oil and season with salt and pepper. Place corn on a baking sheet and broil on the highest rack of the oven, turning often, until corn is charred in spots and is fully cooked about 10 minutes. Combine diced peaches, diced Vidalia onions, diced cucumber, and diced jalapeno in a large mixing bowl. Whisk together lime juice, oil, garlic, smoked paprika, and chili powder in another container. Season with salt and pepper to taste. Toss peach mixture with dressing and refrigerate 1 hour before serving to let flavors meld. Mix in cilantro to the peach mixture just before serving. Serve salad over chopped romaine. For extra crunch, add a handful of roasted and salted pumpkin seeds, cashews, or peanuts. WEDNESDAY, JUNE 29, 2022 FARMERS AND CONSUMERS MARKET BULLETIN 404-656-3722 agr.georgia.gov PAGE 9 Peach and Blueberry Trifle Ingredients 12 thin slices pound cake or angel food cake 6 Tbsps peach jam cup amaretto, divided* 4 cups peeled diced peaches (about 6 large peaches) 2 cups blueberries cup sugar 1 recipe pastry cream 1 recipe whipped cream Pastry Cream Ingredients 4 cups milk 8 egg yolks cup sugar cup cornstarch 2 tsps vanilla extract 2 Tbsps butter Directions In a medium bowl, whisk together egg yolks, sugar, and cornstarch until lemon colored. Set aside. Heat milk over medium heat until not quite boiling. Temper the egg yolk mixture by whisking in a small amount of hot milk, whisking constantly to prevent cooking the yolks. Gradually whisk in the remainder of the milk, stirring constantly. Pour mixture back in pot and cook slowly over medium low heat until mixture just comes to boil and thickens. Remove from heat, add vanilla extract and butter, mixing well. Allow to cool. Whipped Cream Whip cream with a mixer on medium speed. Gradually add sugar then vanilla extract. Continue whipping until firm peaks form. (Whipped cream stands up when beaters are lifted.) Assembly Use a trifle bowl or large glass bowl. Combine peaches, blueberries, cup sugar and 2 tablespoons amaretto in a medium bowl. Mix well then refrigerate until ready to use. This will help release the juices from peaches. Spread cake slices on a cutting board. Brush the slices lightly with remaining 2 tablespoons amaretto. Spread peach jam evenly over half of the slices then top with remaining slices. Cut each cake slice into 8 pieces. Place half of the cake pieces in bottom of trifle dish or glass bowl. Top cake with half of the macerated fruit, spooning juice over cake pieces. Pour half of pastry cream evenly over the fruit. Set aside 1 cups of whipped cream then spoon half of remaining whipped cream over pastry cream. Repeat with remaining cake, fruit, pastry cream and whipped cream. Smooth whipped cream evenly on top. Use reserved whipped cream to pipe decorative rosettes. You can garnish with additional peaches and blueberries if desired. If you decide to do this, melt a little peach jam in microwave and brush over fruit to glaze and to prevent discoloring. Refrigerate several hours before serving to allow cake to absorb juices. Serves 12-16 *You can substitute 2 tablespoons sugar heated with 2 tablespoons water until dissolved and syrupy. Blueberry Cheesecake Smoothie Ingredients 4 oz. plain Greek yogurt cup cottage cheese 1 cup frozen blueberries 1/3 cup milk 1 Tbsp honey Graham crackers for garnish Blueberries, fresh Georgia-grown, for garnish Instructions Add yogurt, cottage cheese, frozen blueberries, milk, and honey to blender. Blend. Pour into cups. Crush graham crackers. Garnish each with crushed graham crackers and fresh blueberries. Serves 2 Frosty Strawberry Squares Submitted by Mrs. John (Judy) Wolfe | Roswell Published March 28, 1979 Ingredients 1 cup all-purpose flour cup chopped pecans cup brown sugar cup butter, melted 2 egg whites 2 cups sliced fresh strawberries or (2) 10-oz packages frozen strawberries, thawed 1 cup sugar 2 Tbsps lemon juice 1 cup heavy cream, whipped Directions Mix together flour, nuts, sugar and butter. Spread in 13x9x2-inch baking dish. Bake at 350 degrees Fahrenheit for 20 minutes, stirring every 5 minutes. Remove from oven and stir again. Remove crumbs from pan and cool. Sprinkle two-thirds of crumbs back in pan to cover bottom. Combine egg whites, strawberries, sugar, and lemon juice in large mixing bowl. Beat at high speed until stiff peaks form, about 10-15 minutes. Fold in whipped cream. Spread lightly over crumbs in pan and sprinkle remainder of crumbs on top. Freeze until firm. Cut into squares. Testers' note Use fresh lemon juice. Blueberry Lemon Icebox Pie Crust 9-inch graham cracker crust 1 cups graham cracker crumbs 6 Tbsps butter, melted cup sugar tsp cinnamon Filling 2 cans sweetened condensed milk 1 tsp lemon zest (about 1 lemon) cup fresh lemon juice (about 5 lemons) Topping 2 cups Georgia blueberries cup blueberry jelly Directions Bake the crust Preheat oven to 350 degrees. Combine all ingredients in a bowl, then press into bottom and up sides of a 9-inch pie plate. Bake for 8 minutes. Set aside to cool. Mix the filling Whisk all ingredients together in a bowl. The mixture will begin to thicken as you mix. Pour into cooled crust. Refrigerate for about 1 hour. Top and cool Distribute blueberries over top of pie. Melt blueberry jelly in microwave. Using a silicone brush, brush blueberries with melted jelly. Chill pie for several hours or overnight. Brian P. Kemp authorized funding in the state's Fiscal Year 2023 budget to provide for a special prosecutor to review animal abuse cases. The position will be housed in the office of the Prosecuting Attorney's Council. Animal abuse can often lead to larger systemic issues such as mental health or criminal activity. This effort will add an extra layer of protection for companion animals as well as protecting communities. "Animal abuse is a horrific, intolerable crime," said Kemp. "We have laws against this behavior, and now we are adding a state prosecutor to focus on this area of public safety. Animal abuse can also be a catalyst for other community issues, like violent crimes against people. This effort will add an extra layer of protection for companion animals as well as help protect Georgians." Georgie's Drive Thru East Dublin Hello! I'm Georgie, the Georgia Grown mascot. I travel the state of Georgia promoting our No. 1 industry, agriculture! The other day, I was driving between East Dublin and Wrightsville on Highway 319 when I spotted the biggest, most beautiful flag I've ever seen! I stopped in at Midway Straw Co. to get some pictures and have a closer look. I met the owner, William Sumner, who told me this flag is the second one he's done so far. In 2019, he and his crew took about a week and 25 gallons of red, white, and blue paint to create their masterpiece. The flag they painted is based on the Bennington Flag, flown at the Battle of Bennington during the Revolutionary War. General John Stark led an army of Americans against soldiers fighting for England on the Vermont/New York border. His men whipped the British and were cleaning up the mess they'd made when another bunch of British soldiers showed up. Everybody went to fighting again, and the Americans claimed victory twice on the same field. General Stark is also famous for a line he wrote in a letter to commemorate the anniversary of the Battle of Bennington: "Live free or die." Happy Independence Day! The markets are also home to some good places to have breakfast, lunch and more. Moultrie State Farmers Market Gregg Hersey's Market Barbeque and Catering has served up good cooking at the Moultrie market since 2003. The restaurant is located at the end of the market property with no signage, but it is the worst kept secret in town. Patrons enjoy barbeque along with a buffet of traditional Southern cooking. "The front door faces into the market on the west end," Hersey said. "It's all been word of mouth. If you drove by, you wouldn't know a restaurant was here." Hersey and a friend got into the catering business to fund traveling to barbeque cookoff competitions across the country. They made award-winning barbeque on some weekends and catered weddings and family gatherings on other weekends. "The building was basically to cater out of, but then we ended up opening a little walk-up, a grab and go deal," Hersey said. "Over the years, we've added on. When we opened, we had 20 seats here, and now we seat 200." Barbecue is on the menu daily, along with other meats such as cube steak and gravy, fried and grilled pork chops, and fish on Fridays. Chicken is a standard choice each day from the buffet, fried or smoked. "People like their fried chicken here," Hersey said. Cordele State Farmers Market Isaac Jackson is looking to try something new at the Cord- ele State Farmers Market with the opening of Jackson's Soul Food there in July. Jackson said he was looking for a new location. He and his family operate their restaurant business from two locations, Sylvester and Tifton. "People are always asking me to `bring one here, bring one here,' and we had been getting a lot of people driving from Cordele to eat Sunday lunch at our Sylvester restaurant, so I was looking around for a location," Jackson said. Jackson said he was driving around Cordele looking for locations last year and had a notion to visit the farmers market to buy a watermelon. "It was amazing the number of people that travel through that place," said Jackson, who was at the market during the height of watermelon harvest season. "This place needs to be open." Jackson said he hopes to also attract customers from out- Gregg Hersey started Market Barbeque and Catering at the Moultrie State Farmers Market in 2003 as a catering business to fund barbeque cookoff competition trips with a friend. The restaurant will be cafeteria-style, where customers choose meat and side dishes. It will seat about 80 people. He said they would try to source as many vegetables as possible from the market. "We will be behind the bar to fix you a plate where you can pick up and go or sit down and eat," Jackson said. "It's been successful in both my other places. I feel like Cordele will be a good opportunity to give folks another choice of a downhome, soul food lunch." Jackson started his restaurant in Sylvester 13 years ago while still working at the U.S. Marine Corps Logistics Base in Albany. He said the work was demanding with a weekday job and a restaurant on weekends, but he had help. Several of his family members were employed and also working at both locations. Jackson retired from the base three years ago and now focuses exclusively on the restaurant business. He is completing the final parts of permitting and is looking forward to opening by mid-July. "It's the perfect spot for what I want to do," Jackson said. "My target isn't just the market but also to get people outside to come in and eat with us. I don't want to be there just for a season. I want to be there for a long time." Augusta State Farmers Market Riverwatch Brewery at the Augusta State Farmers Market offers a very different experience. A microbrewery, the business makes the beer they sell on-site. Riverwatch has three core beers year-round: Scenic Overlook (blonde ale), 104 (pale ale) and Cautionary Tale (double IPA). They also make seasonal beers. This summer, patrons can quench their thirst with the seasonal summer brews Nearest Point of Relief NPR (lime wheat beer) and Fizz (sour beer with different fruit flavors). "We also do a house-crafted lemon soda for the summer, and we use that making shanties, part lemon soda and part beer, and that's very popular now," said Brey Sloan, who opened the microbrewery in 2016. Sloan arrived in Augusta after retiring from the U.S. Army at the rank of colonel. At the time, Riverwatch was the only brewery in Augusta and the first to open since Prohibition. She chose to open at the farmers market more for the cost than the location. "The cost of doing business on the farmers market has been really beneficial," she said. "I don't think we could have gotten started without that sort of incubator scheme." And though the market is off from downtown, Sloan, who operates Riverwatch with her children, Anne and James, has built a loyal following of customers. She said the market staff has worked to help in any way they can. "The farmers market is intricate. It has buildings, and you have to go around corners and such, but our market manager built a gate just for our use, so that made a tremendous difference," Sloan said. "The support of the market manager has just been phenomenal."
