Everyone, that is, except for Chef Todd White, chair of Albany Technical College's Culinary Arts program, who believes success tastes more like Georgia and less like everywhere else. To make that point to his students, White is introducing them to the bounty of Georgia with the help of Georgia Grown member and TV personality Lara Lyn Carter. Carter, who produces her own line of culinary sauces under the Wicker & Whisk name, hosted a recipe contest for White's students that challenged them to develop delicious new dishes using Carter's sauces and foods grown and produced locally. They delivered dishes that were both avant-garde (Port Mustard Cheesecake) and traditional with a twist (Pretzel & HerbCrusted Oven-Fried Catfish served with a Roasted Vegetable Herb Medley, which won the day. The panel of judges who deemed the catfish dish to be the best overall representation of Georgia-grown Southern cuisine consisted of: Beth Meeks, southern marketing supervisor for the Georgia Department of Agriculture's Georgia Grown program; Albany Herald Digital Editor Brad McEwan; WALB anchor Melissa Hodges; and Southwest Georgia Living Editor K.K. The catfish, White said, was one dish the judges believed would be easy to replicate at home. "It's something that reminds you of South Georgia, and incorporates new flavors and new twists," he said. "It was really good." Carter praised every entrant in the contest for their creativity and willingness to "think outside the box" with their ideas. "A lot of great chefs are about to leave this school, and they'll be the chefs in the restaurants and the resorts and their own private restaurants, and whatever they end up doing, I promise you, it will be good," Carter said. "They've gotten a great foundation and they are creative." Carter is a tireless advocate for Georgia-grown goodness, promoting her home state at food festivals nationwide and on her "Thyme to Share" cooking show on Georgia Public Broadcasting. Carter won an Emmy Award June 11 for her work on the show. She consults frequently with the technical school's culinary arts program, even enlisting the students' help to prepare 8,500 whiskey bites a confection made of espresso, whiskey and chocolate for the two-day Food Network & Cooking Channel South Beach Wine and Food Festival in Miami last February. White wants graduates of his culinary arts program to leave with the same measure of knowledge and enthusiasm about the flavors of their home that Carter possesses. "Our students, they grew up here but they're kind of blind to what's around them," he said. (Provided photo) A North Georgia wildlife trapper made the news in early June for nabbing three coyotes over the span of just two weeks. It isn't the "what" that made this feat newsworthy, however, but the "where:" All three animals were captured in residential areas of Sandy Springs, a city of 100,000 people who live and work just 20 miles north of downtown Atlanta. The presence of coyotes anywhere in Georgia is not unusual, said Drew Larson, a wildlife biologist with the Georgia Department of Natural Resources in Social Circle. "We have coyotes in every county of the state," Larson said. "Over the past several decades they've really spread throughout the Eastern half of the U.S., and they're even found in Central Park in New York City." This isn't news to Georgia farmers raising livestock. "Generally coyotes are wary, shy creatures. They don't tend to be aggressive toward humans," Larson said, "but they are predators, and they do eat animals such as fawns and small livestock. Rarely do they take down larger animals like fullgrown deer." Mike Coggins started having issues with coyotes on his cattle ranch about 10 years ago. Coggins owns Blackwater Cattle in Lake Park down near the Georgia-Florida line. He heard from other ranchers that donkeys were effective at controlling predators, so he introduced them into his Brahman-influenced herds. Arty's Garden: Leapin' Lizards! By Arty Schronce Little Orphan Annie doesn't live at my house, but I think of her and her signature exclamation when I see a Carolina anole (Anolis carolinensis) jumping around my garden. I don't recall ever seeing these slender lizards as a child in my part of North Carolina (just west of Charlotte) but I do remember seeing them on the coast of South Carolina during our annual beach vacation. I was thrilled to discover them here in Atlanta. Carolina anoles are sometimes referred to as American chameleons because they can change color from brown to green. They are not chameleons, however. Their color changes are due to body temperature, stress and activity rather than a desire to blend into the background. I have seen Carolina anoles in their green phase resting against the brown planks of my porch. I have seen green ones and brown ones side by side. Their numbers seem to fluctuate in my garden, with me seeing more some years than others. This year they seem more numerous, or at least more active. Every day at least one male runs along the edge of my porch. (I imagine it is the same one, but I cannot be sure.) He stops numerous times along the way to extend his dewlap, bob his head and do some push-up movements. I am told this is a display tactic to woo females and warn other males. He will jump on the camellia, into the ostrich ferns or onto the drainpipe and continue his mission of warning and wooing. I delight in watching him. Despite his many push-ups he is not musclebound but lean and nimble, and he seems unconcerned with my lumbering presence in the porch swing while he gracefully and quickly goes on his way. Carolina anoles eat insects, but I have not seen one feeding. I figured anoles would only drink dew or raindrops but I witnessed one sip- ping from a shallow dish of water this spring. I also got to witness a successful courtship culmination for the first time and hope to have lots of little lizards later this summer. I have put some pots of loose soil amid the ferns to provide good areas to lay eggs. In parts of Florida and South Georgia, the brown anole (Anolis sagrei), an introduced and aggressive species, is outcompeting our native anole or forcing it to a more arboreal habitat. We should never introduce non-native animals into the environment as they can wreak havoc and threaten our native species. I hope this interloper never makes it to Atlanta. For now, I am enjoying the show and doing what I can to help the Carolina anole thrive in my garden. And just how far can a Carolina anole jump? I have seen them go at least a foot but I think they could go farther. Leapin' lizards! From straw bale to table When George Wilkerson gardens, he usually gardens big. At age 90, however, he's decided to scale back his horticultural activities just a bit. This year, Wilkerson decided to try his hand at wheat straw bale gardening at his home on Ho Hum Hollow Road in Between, Ga. He found great success with tomatoes, as this photo shows. Straw bale gardening is an inexpensive and simple way to garden anywhere on the deck, driveway or lawn that gets 6 to 8 hours of sun exposure. A small amount of potting soil to cover roots or to create a shallow seedbed is all that's required. Decomposition of the inside of the bale provides nutrients to growing plants. Cook Georgia Grown: Pretzel & Herb-Crusted Oven-Fried Catfish with Roasted Vegetable Herb Medley Ingredients: cup pretzel crumbs cup yellow cornmeal 1 tsp. salt tsp. black pepper 1 tsp. dried thyme 1 tsp. paprika tsp. celery powder tsp. garlic powder tsp. onion powder 1 tsp. lime zest 1 tsp. lemon zest Tbsp. lime juice cup Wicker & Whisk Herb Dressing* 1/3 cup mayonnaise 4 catfish fillets 2 Tbsp. butter Preparation: In a food processor, grind pretzels until fine. In a bowl, mix cornmeal and ground pretzels along with the remaining dry ingredients. Place breading in a shallow pan. In another bowl add mayo, lime juice and herb sauce and mix together. Wash and pat dry fish, then evenly on both sides apply mayo mixture. Put fish into breading and coat both sides liberally. Place fish on a sheet pan lined with nonstick foil. Pour melted butter evenly over fillets. Place into a preheated 425 degree oven for 12-18 minutes or until golden brown. Roasted Vegetable Herb Medley Ingredients: 1 carrot 1 onion 2 small potatoes 1 ea. of signal bell peppers (green, yellow, red) 2 squash 1 small eggplant 1 cup fresh green beans 1 zucchini cup Wicker & Whisk Herb Dressing* 1/3 cup whipping cream 1 tsp. butter 1 tsp. minced garlic Dash of pepper Dash of salt cup oregano cup parsley Preparation: Thoroughly wash and peel all vegetables. Chop onion, potatoes and carrots and place in 350 degree oven. In a small pot bring water to a boil. Put washed green beans in water and boil for 3 to 5 minutes. Remove beans from pot and place in ice bath, then on napkin to dry. Wash, dry and chop the remaining vegetables. Remove onion, carrots and potatoes from the oven, then place beans and other vegetables on the sheet pan with carrot, potatoes and onion. Sprinkle with salt and pepper and drizzle with olive oil, then place in oven set at 450 degrees for 18 to 25 minutes. In a saucepan melt butter. Add garlic, herb sauce and whipping cream and stir until heated. Pour sauce mixture over vegetables, tossing to coat. From sales hub to social hall, it's a place where people gather for food, fun and fellowship. Mickey Cummings, manager of the Blairsville market, said it started several years ago in the parking lot of the courthouse. "We had roughly 30 vendors there," he said. When the county floated a special purpose local option sales tax to fund the construction of a permanent market, 83 percent of voters said yes to the idea, Cummings said. Since relocating to its own dedicated spot of land in 2010, the market regularly draws more than 80 vendors. The new site consists of three covered but open-air sheds, a canning plant and a cafe. The farmers market is held every Saturday and Tuesday from June through October. Fridays are reserved for a community-wide yard sale, and other days of the year see everything from car shows to charitable events. Dot Patterson of Blairsville has been selling her homegrown jams and jellies at the market since those early days on the courthouse lawn. She offers 24 different flavors year- round adding seasonal favorites like cranberry and pomegranate during the holidays along with chow-chow and pickles. "I started making these with my grandmother when I was six years old," Patterson said. Frederic and Laura Guyonneau of Roswell and Blairsville are fans. They have a cabinet full of Patterson's concoctions, Laura Guyonneau confessed, but can't pass up an opportunity to buy more when staying at their mountain house. "Very often times we'll come on a Saturday morning and decide what we're going to have for dinner" based on what's available at the market, she said. Buying directly from families who've farmed for generations and handed down traditions from one to the next can lead to enlightening finds. Smith Produce out of Cleveland, for example, offers white cucumbers that grow from reseeding plants left by Granny Payne, who died 20 years ago. The cucumbers are sweeter and crunchier than their green cousins, and make for a fun change from the routine. The market was the brainchild of Union County Commissioner Lamar Paris, who wished to give the agricultural and artisanal communities of his mountain home a boost. At one time, Union County was a prominent agricultural community. In the early 1990s the county was generating $60 million in income off agricultural interests mostly chickens, Cummings said. As the older generation of farmers died or retired and their heirs saw greater value in selling the family farm for development, the area's ag output fell significantly. In addition to drawing growers and artisans from all over north Georgia, the canning plant at the market serves some 300 customers a year who produce as much as 17,000 jars of preserved produce and soups and stews. Every spring the market hosts a Ramp Festival, which celebrates a mountain delicacy that tastes like a spring onion and smells like garlic. Native to Appalachia, ramps were considered a tonic by the Cherokee and consumed as the season's first greens by early mountaineers. Coggins said he doesn't know of an instance where a coyote took down a live calf from his herd, but said they would come for dead ones. And while the Brangus cows he keeps are known for being vigilant mothers, the donkeys add an extra measure of protection against predation. He'll typically put two donkeys with 100 head of cattle. He said the donkeys form a bond with their pasture-mates almost immediately. "They're hard-headed and they're fearless and they consider the cattle their own," he said. Julia Asherman, who owns Rag & Frass Farm in Jeffersonville, said a donkey "will literally chase a coyote out of the field." Dr. Rusty Bean, a veterinarian and cattle rancher who relies on donkeys to protect his herd on the Little Farm near Gray, said there's no more fierce guard against predation than a donkey. "A Sicilian donkey is Satan's guard dog," Bean said. Speaking of guard dogs, the owner of White Oak Pastures in Bluffton literally leaves the safety of his various livestock herds to the dogs. "We've got 13 guardian dogs that roam over 2,500 acres of land," said Will Harris. "We don't feel like we ever lose any of our livestock to mammalian predators. We do lose poultry to the raptors eagles, hawks and owls but I can't say enough good things about the guardian dogs. They are highly, highly effective. They may be expensive when you buy them but then they breed and you don't have to buy anymore." Harris deploys Great Pyrenees, Anatolian Shepherd and Akbash dogs to guard his cows, hogs, sheep, goats, rabbits, chickens, turkeys, geese, guineas and ducks against coyotes, feral dogs, bobcats, feral cats, foxes, skunks, raccoons and opossums. The guardian dogs are kenneled as pups with young members of the herd they'll be assigned to protect. After six to 10 weeks, both will be returned to the herd. "They do a great job," Harris said. The Akbash, Antatolian Shepherd and Great Pyrenees dogs were originally bred in Europe to protect livestock from predators like wolves and bears, and are typically twice the size of a coyote. "A large coyote would be probably 40 to 45 pounds," Larson said. "On average, they're 30 to 35 full grown." Coyotes will take small house pets like cats and miniature dogs from residential lawns, Larson said. A six-foot fence will provide an effective barrier in a residential setting, as will harassment techniques such as noise and lights. While coyotes are opportunistic hunters who roam primarily at night, it is not unusual to see one during the day, Larson said. "They do tend to be more nocturnal but we have instances where we see mostly nocturnal animals come out during the day foxes, bobcats, coyotes so just a sighting during the day should not be a cause for alarm," he said. It is only when these animals show signs of illness foaming at the mouth, emaciation, aggressive behavior toward humans, a mangy appearance in the case of coyotes that the Wildlife Resources Division of the DNR should be contacted. With the disappearance of red wolves and mountain lions from Georgia, coyotes have no natural predators here, Larson said. That combined with their easy ability to adapt to any environment and find a food source ensures their continued presence in both rural and urban environments.
