Commission Helps Ga. Peach Industry
Peaches are one of Georgia's most popular and most valued commodities. The state of Georgia produced approximately 130 million pounds of peaches in 1990 with a value of almost 37 million dollars. Growers expect this year's harvest to be the largest since 1984, totaling about 150 million pounds.
There are about 20,000 bearing acres of peach trees in the state, with most of them concentrated in

the two commercial growing regions. The central region is the largest with about 70 percent of the peach trees in the state, and 82 percent of the state's production. The southern region is home to about 23 percent of the trees, and produces about 17 percent of the state's harvest. The northern region has about 7 percent of the peach trees, but is primarily a retail and not a commercial growing area. It is composed largely of independent growers who sell peaches at roadside stands or on a pick-your-ownbasis.
Georgia peaches are always in demand, and it looks as though the desire for high-quality, great-tasting fresh fruit will continue to grow. In an effort to meet this demand, researchers are continually experimenting with new varieties of peaches, including those that will ripen earlier or later, to extend the growing season. Peaches with more color and different sizes are vine developed. Many orchards grow at least 10 varieties, with one of them ready for picking each week during the harvest season. Georgia produces more than 40 varieties of
peaches. The Georgia Peach Commission
works to promote Georgia peaches in several ways. In previous years these promotions have included planting peach trees along Atlanta's Peachtree Street and in New York's Central Park, a harvest tour in Fort Valley, and of course, recipe contests and brochures.

Insecticidal Soap Recalled
Georgia gardeners and nurserymen are advised to discontinue use of "ORTHOGANIC Insecticidal Soap" due to contamination by the herbicide Oxyfluorfen. Ortho Consumer Products, a division of Chevron Chemical Company which manufactures the insecticidal soap, has issued a total recall on the product although contamination is limited to a single batch.
Affected lot numbers are 123650 and 120701 and can be found on the neck of the bottle. While health risks are negligible, the recall is being issued because Oxyfluorfen is not approved for use on food plants. Consumers are urged to call the company collect at (415) 842-2334 to arrange for the return of the product.
While it is not known how the contamination occured, the company is conducting a detailed investigation to determine the cause. This is the first such incident in the company's 80plus year history.
Home Canning Involves Both Art And Science
Preparing home-preserved foods for your family meals can be a satisfying and delicious art, but more than any other type of food preparation, home canning is also a science. Home canned foods may be lethal if the food is canned improperly.
Although home canning has been popular since the early 1890s, processing recommendations based on sound scientific research have been available only since the late 1940s. Many home canning recommendations were reviewed in the late 1970s. As a result, recipes from "grandmother's" cookbook may be out-of-date and unsafe.

New Cultivar Potential King Cotton
The Georgia Seed Development Commission has announced the release of a new cotton cultivar named "Georgia King," according to Georgia Commissioner of Agriculture Tommy Irvin.
The cultivar was developed at the Coastal Plains Experiment Station in Tifton and has been bred to demonstrate superior fiber qualities and disease resistance. The Stoneville Pedigreed Seed Company of Stoneville, Mississippi has been named as the exclusive producer and marketer of the "Georgia King" cotton seed. A limited amount of seed will be available in 1992.
"This is the first new cotton variety introduced in many years and it is good news for the state's cotton growers," said Irvin. "The 'Georgia King' gives southeastern otton growers a cultivar that yields well and has the fiber qualities that mills want."

A freshly cut watermelon is a tasty treat on a hot summer day, and Georgians should be able to find a good supply of melons this month at Georgia state farmers markets and grocery stores throughout the state.
As of July 2, more than 105 million pounds of watermelons had passed through the Cordele m#rket. During the peak of the season, this market handles an average of six to eight million pounds of watermelons daily.
The Georgia Seed Development Commission, a division of the Georgia Department of Agriculture, manages the Georgia Foundation Seed program for public varieties. The commission also has responsibility for licensing arrangements for varieties developed by the Georgia Agricultural Experiment Stations and released to the private sector.

Q: I was frying some pork chops recently, when the grease caught fire. Luckily, I had a box of baking soda handy, so I quickly poured it on the flames and put out the fire. I went out the same day and bought a fire extinguisher. I think you should warn your readers about the dangers of grease fires and tell them to get a fire extinguisher for the kitchen, if they don't have one already.
A: This is good advice because, when something like this happens, you don't have much time to think about what to do. It is a good idea to have several fire extinguishers in the house in key areas, such as the kitchen, bedrooms, garage and workshop. If you don't have one and a grease fire starts, you can put it out with baking soda, as you mentioned, or baking powder or salt. You also can put a lid on the frying pan to smother the flames by cutting off the oxygen. Never use water on grease (or electric) fires, because it will not put out the flames and can actually make the fire spread. Never pick up a pan of burning grease and try to move it. The oil can splash on you and, if you drop the pan, can set the kitchen floor on fire. If the preceding measures fail to put out the fire, turn off the stove or oven, warn others in the house, get out and call the fire department. Small fires can spread very rapidly.

The central region is the largest commercial peach-growing region in the state. This area produces about 100 million pounds of peaches each year, and is home to about 1,600,000 peach trees. The largest peach-growing counties in this region include Burke Crawford, Houston, Macon, Peach, Talbot and Taylor. The southern region produces about 20 million pounds of peaches each year, and is home to about 550,000 peach trees. July tends to be the peak month for weeds, insects and diseases in gardens, so be sure you continue a consistent spraying and dusting program. Remember, when using any pesticide or herbicide, always read the label and apply according to directions.
Pyracanthas and azaleas should be checked for lacebug infestation. If you discover white speckling on the top of the leaves, spray with malathion. Whitish, winding trails on the leaves of hollies, boxwoods and other ornamentals indicates the presence of leaf miners. Use Cygon to control these pests.
To extend color in your garden into late summer, sow seeds of such quick-growing annuals as zinnias and marigolds.
Start planning your fall garden this month. Plant tomatoes, okra, corn, pole beans and lima beans no later than July 20 to allow them time to mature before frost.

ity and safety are perfected. New recommendations for new products or new procedures also may be offered. From a safety standpoint, it is important to use only the most current, reliable, tested recipes and procedures.
To "test" a canning recipe means more than making sure the food tastes great and has a predictable yield. Safe, reliable canning recommendations can only be made after the recipe has been scientifically tested to assure the canned product will not support the growth of deadly bacteria and other spoilage organisms.

Safe canning requires a precise heat treatment for a specific time to destroy spoilage bacteria. In low acid foods this is critical because one of the spoilage organisms, Clostridium botulinum, if allowed to survive in the canned food, can produce an extremely potent and lethal toxin.
Just because a jar has been sealed doesn't mean it is safely canned. For example, the deadly Clostridium botulinum bacteria can grow in improperly processed low acid food only when air is not
present. Improperly processed low acid foods such as vegetables,
meats, fish and poultry provide the environment in which the C. botulinum toxin could be present. Because there may be no noticeable signs of spoilage, improperly processed foods should be very carefully discarded.
In "sequential spoilage," canned high acid foods (fruits and tomatoes) can also contain the deadly Clostridium botulinum toxin. However, this type of spoilage tends to be more noticeable and thus poisoning from it is extremely rare.
Sequential spoilage occurs in improperly processed high acid foods when an organism that thrives in acidic conditions begin to grow. This acid-loving organism uses up much of the acid present, and as a result converts the high acid food to low acid food. The "new" low acid food has the right environment for the growth of the lethal botulinum toxin.
Canning is a science, as well as an art. Make sure you can foods safely, to avoid illness and food spoilage.
