"Greatest Cowboy" Event To Debut in Augusta
The Augusta Cutting Horse Fu turity is setting the stage for its second decade of growth by estab lishing a completely new and inno vative event called "America's
Greatest Cow boy."
The "Greatest Cowboy" event will be in addi tion to the tenyear-old Augusta Futurity and Classic which has grown from a three-day cutting horse show to a nine-day western extravaganza which includes cut ting horse competition, arts and crafts, western exhibitors, and Fu turity Festival events. include a celebrity cutting contest, a charity chili cook, a hoedown, an art show, a riverboat cruise, a wild game cookout, Jack Russell Terrier races, and a horse auction.
The site for all the activity is the Augusta-Richmond County Civic Center located just two blocks from downtown Augusta and its new Riverfront development. Cutting acton will begin on Wednesday, January 24, 1990, and conclude with the Futurity finals event on Saturday night, February 3, 1990.
This "first ever" single elimina tion event will pit the top 32 money earners in an event that will fea ture the top cutting horse riders in the world to compete for the title of "America's Greatest Cowboy." The "Greatest Cowboy" event will begin on Friday, January 26, and con clude with the semi-finals and fi nals on Saturday night, January 27, 1990.
Show manager Pete May states, "The 'Greatest Cowboy' event has the potential to be the most innova tive step in the presentation of a cutting horse contest."
The sport of cutting is the richest arena competition for horses in the United States. Major purses have topped $1.5 million and in excess of $20 million is offered annually at all National Cutting Horse Associa tion sanctioned events. Department Regulates Seafood to Ensure Quality and Safety

The Georgia Department of Agri culture protects consumers of sea food, as well as other food products, through a comprehensive program of inspection, licensing and certifi cation. The department is responsi ble for regulating the transporta tion, processing, packaging, distri bution, wholesaling and retailing of seafood, as well as other food prod ucts in the state.
On the state level, season inspec tion can best be understood as part of the larger issue of food inspection in general. Various state laws, rules and regulations from which the de partment derives its authority, such as the Georgia Food Act and the Georgia Weights and Measures Laws and Regulations, cover sea food as well as other types of food. Other laws and regulations, such as the Georgia Wholesale Fish Dealers Law, apply more specifically to sea food.
Of all the types of firms covered under the Georgia Food Act, over a dozen of them pertain to seafood. These include, among others, super markets and other retail food stores, retail convenience-type

stores, retail seafood stores, whole sale fish dealers, shrimp processing plants, crabmeat processing plants, catfish processing plants, miscella neous seafood processing plants, food storage warehouses and sal vage food dealers.
Overall, seafood inspection is a cooperative effort that involves the Food and Drug Administration, sev eral other federal and state regula tory agencies and voluntary indus try associations.
Georgia, like many other states, contracts with FDA to have a desig nated state agency, in this case the Georgia Department of Agriculture, do the actual inspection of seafood facilities as a means of providing local, hands-on supervision and to avoid duplication of effort.
The Georgia Department of Natu ral Resources inspects seafood har vesting sites in the state's fresh and coastal waters to make certain they are not polluted. The Georgia De partment of Agriculture inspects those seafood vessels landing oys ters or clams. Otherwise, the de partment begins its inspection duties at dockside, or the first point of entry of seafood into the state. When seafood is served to custom ers in a restaurant, that establish ment is inspected by the local county health department. All points of transporting, processing, preparing, packaging and label ing between these two extremes are supervised by the Georgia Depart ment of Agriculture.
Forest Products Focus Of Value-Added Seminar
A seminar to explore the poten tial for value-added forestry prod ucts in north Georgia is scheduled Jan. 26-27 at the Holiday Inn in Gainesville.
Topics covered will include new products that can be made from wood and new ways to increase the value of current wood products. In formation about resources, financ ing, training and technical support also will be presented.
Conference sponsors include the Georgia Forestry Commission, the U.S. Forest Service and the UGA Extension Service. Registration fee is $35 before Jan. 8, $40 after that date. Inspections are carried out by the department's Consumer Protection Division, which is organized into five districts with a total of 72 sanitarians covering the state. While district five includes all of the Georgia coastal counties, sea food processing firms are found in Atlanta, Augusta, Columbus, Macon and several other locations in the state.
Georgia seafood regulations are among the strictest in the nation.. All seafood processing firms are required to obtain a license and/or be certified to do business in the state. These firms are inspected at least every three months and more frequently if violations are signifi cant. Georgia is one of the few states that inspects all processing plants and other food dealers at least once per quarter.
Sanitarians make routine unan nounced visits during the facility's operating hours with detailed in spection agendas. These rigorous inspections ensure that high stan dards are met regarding cleanli ness, complete and accurate label ing, food safety and good manage ment practices.
The department has maintained this quarterly inspection schedule for seafood since the late 1960s, and since 1972 for the shellfish pro gram, which was transferred from

PUMPKIN MUFFINS
1/2 cup butter or margarine, softened 1 1/4 cups sugar 2 eggs g 1 cup mashed pumpkin puree 1/3 cup milk 1 1/2 cups all-purpose flour 2 teaspoons baking powder 1/4 teaspoon salt 1 teaspoon pumpkin pie spice 1/2 cup raisins 1/2 cup chopped Georgia pecans g
Cream butter; gradually add 1 1/4 cups sugar, beating at medium speed of an electric mixer. Add eggs, one at a time, beating well after each addition. Stir in pumpkin puree and milk.
Combine flour, baking powder, salt, 1 teaspoon pumpkin pie spice; add to creamed mixture, stirring just until moistened. Stir in raisins and pecans. Spoon into greased muffin pans, filling two-thirds full.
Bake at 400 for 22 to 25 minutes. Yield: 2 dozen.

PEAR AMBROSIA
10 large pears 1 cup sugar 12 ounce pkg. frozen orange juice concentrate 1 small pkg. orange koolaid 20 ounce can crushed pineapple 6 ounce can coconut 2 Tablespoons lemon juice 2 Tablespoons ascorbic acid powder
Mix all ingredients together in a large mixing bowl. Chill until ready to serve or freeze in small containers for later use.

Preserve Beauty of Poinsettias Long After Christmas Holidays

While many other plants are linked to the holiday season, poinsettias remain the overwhelming choice as the traditional flower of Christmas. This native Mexican wildflower seems to grow more pop ular every year: millions are sold annually in America.
Poinsettias were discovered in 1825 by Joel R. Poinsett, the first United States ambassador to Mex ico and an amateur botanist. His Mexican friends called it the "flower of the holy night."
Poinsett brought some of the flowers to his home in Greenville, S.C., and shared cuttings with hor ticultural friends and nurserymen.
In was not until 1902, however, that the flower became an impor tant part of the Christmas season in America, after many years of selec tion and hybridization. Today florist shops, garden centers, nurseries and supermarkets offer poinsettias in a variety of sizes and forms.
Modern versions of the poinsettia become available before Thanksgiv ing, remain beautiful for weeks or months and, with a little care, will thrive as green houseplants the year around.
The following tips should help prolong the enjoyment of your holi day poinsettias:
* When transporting plants home, make sure they are protected from temperatures below 50 degrees Fahrenheit. Chilling causes their leaves to droop.
* Place in a room with lots of bright, natural light. Lack of day light can cause leaves to fall off prematurely.
* Water to maintain a slightly moist soil. When soil surface is dry to the touch, water thoroughly, daily if needed. Don't keep soil too wet or let it get completely dry. The pot should drain well. Punch holes in decorative wrapping if it covers the drain hole.
* Normal household tempera tures are usually ideal. Tempera
tures above 72F in the daytime or 60F at night may cause early fading

of flower color. Protect from chilly drafts or heat from appliances.
After their holiday blooms have faded, here is how to keep poinset tias flourishing as attractive green plants:
* Place plants that still look healthy in bright light and keep the soil moist. As the weather begins to warm up, they will put on new growth. As flowers fade, cut them back to accommodate new growth.
* Prune back plants that have deteriorated, leaving two or three nodes on each stem. This will en courage new growth.
* To control size and shape, plants can be pinched or pruned back at any time they are growing vigorously. To help sustain their rich green color, feed them with an all-purpose house plant fertilizer at the recommended rates.

Now it is allowed under certain conditions. Department inspectors recently toured a heat-shocking plant in Florida to see if comparable facilities could be opened here.

Some of the same reasons that make seafood so popular as a food item, such as its high protein con tent, can also make it susceptible to spoilage by promoting bacterial growth, and require extra care on the part of processors, handlers and consumers.
Just as with any other food prod uct, the consumer is the final sea food inspector. Consumers can learn to judge the appearance and texture of seafood and to use prompt refrig eration, thorough washing and com plete cooking to prevent potential problems.

"As consumers become better in formed, there should be even more seafood inspection in the future, and the states will continue to do the bulk of the inspections," Irvin said, adding: "Our department has kept pace with the growth in sea food consumption by innovative use of staff, training and technology. The anticipated growth in seafood inspections will require even more hard work and innovation on our part, as well as continuing coopera tion from seafood producers."
