_ Before discussing specific. items in

marketing fluid foil and milk pro-
ducts it is well that we keepin mind

some basic facts related to the dairy

. dustry is complex i in. its entirety, en-
gulfing economics. public health,
sanitation, esthetics, semi-public util-

ity and enforcement of standards.
The never-ending struggle in this in-
dustry is requiring sound and practi-
cal laws, reasonable and intelligent
enforcement and constant education
in the best methods and procedures

So hor keeping -: an excellent food whole-
seme, from its raw production,

_ through its processing and to its ulti-
mate consumption. In a competitive
business, the normal trend in market-
ing a product is. toward maximum
qualities and standards.

The consumers are showing a wider
intrest in the milk problems and are
becoming more aware of factors in-
volved in the milk industry. _For in-
stance, at the end of the government

milk subsidy, a survey showed that
three of every ten consumers realized

. that the government subsidy had paid
2 cents a quart on the consumers
milk bill, And again, it is well for the
consuming public to know that a,
days wages of an industrial _ worker
in the United States would buy more

_ milk in January 1947 than 10 years
ago.

satisfied customers and consumers.
As milk and milk products go into
the packages the real job of retailing
- begins. The American consumers are
demanding more convenient packages .
and services, to make the serving of ak
such products more pleasant and ap-_
petizing to the family and to guests
- This phase of retailing cannot be
overlooked by the manufacturers as
it could during the war years.

TEMPERATURE VITAL POINT

Some basic rules must be followed
to maintain quality during storage
and retailing of milk and its prod-
ucts. _First, the temperature is a
prime factor in keeping quality. _The
following table gives the effect of
temperature and time upon milk qual-
ity and indicates a general effect on
milk products. _The two samples of
milk are of different quality.
